The International Symposium on the Basis of the Quality of Typical Mediterranean Animal Products was organized by EAAP, FAO, CIHEAM, the regional government of Extremadura (Spain) and supported by the European Commission. The proceedings focus mainly on gathering information and discussing arguments concerning the quality of typical Mediterranean products of animal origin. This publication provides an alternative view of the assessment of the products by the consumer and discusses the marketing of these products and their possible future. It provides a description of the scientific investment carried out on this type of product in the Mediterranean.
