Beginning with an overview of food and food constituents, Handbook of Nutrition and Food outlines current nutrient analysis systems, techniques for data analysis, and food labeling. The second section reviews nutrition science including terminology, biochemistry, nutrient-nutrient interactions, and comparative nutrition.
