This text is the result of the first Symposium in a series of three, organized by the International Cooperative Research Network on Buffalo, with the objective to exchange research and experiences in producing and marketing buffalo products and to highlight their specificity. Buffalo products were discussed in sessions on: milk products; meat and typical products; genetic and environmental aspects and Certification of production. Information on these subjects is given for the Mediterranean region which should be of importance to many developing countries as well.
